Other Filipino favorites are Chicken Arozcaldo, Chicken Sopas, Misua with Bola-Bola.

Sinigang na Baboy always reminded me of my childhood days. My lola always cooks for me when I was little every time I got back from school. She’ll cook me this wonderful dish and I’ll definitely dig in while watching afternoon show. Sinigang have many varieties where you can mix in different meat like for example fish, beef, shrimp, or chicken. In some areas in the Philippines, instead of using tamarind they use guava, calamansi, bilimbi, or unripe mango.

Nilagang Baka (or Beef Stew with Clear Broth in English) is also one of the famous dishes here in the Philippines. Some cook it with broth cubes and some tried to do Beef bones. It’s a really yummy dish where you will find yourself coming back for more.

One of my favorite soup dishes is called Misua Bola-bola or Meat ball soup with Misua Noodles. I remember when I was a kid I used to enjoy it with a bowl of rice and overflowing of misua soup in it. The warm feeling Misua noodles will give you the feeling of comfort in the cold weather. This dish originated from China which we inherited through its culinary influence in the country. Unlike rice vermicelli (bihon), which is made from rice, misua is made from wheat flour. These are very thin, white noodles that are very delicate and easily break when raw. You can buy them from your nearest sari-sari store (variety store), public market, or supermarket.

Misua Bola-bola is also known in some parts of the country as Almondigas. Because some recipes of Almondigas use rice vermicelli instead of misua, we will call it Misua Bola-bola to make a distinction. Besides, that how we call it back home in Malabon. Perfect for rainy days, enjoy a warm bowl of Misua Bola-bola as a main dish, an appetizer, or as an afternoon snack (merienda). I still prefer the childish way by mixing it with my rice. I was always taught to always wash my hands before and after eating when I was little. Honestly, when I was that little I didn’t really care if I wash my hands or not. But then when I got older I then understand the true meaning of what my elders are telling. General Hygiene is the best way to start this topic because most of you guys are forgetting this basic thing that we should’ve been doing a long time ago.

Wash your hands in hot soapy water and rinse well. Washing hands before you touch any food and washing again after you hold any food. Noticed I said any a couple of times? Obviously you have to put a thing or two here and you don’t want that your food can be in contact with an icky counter or other kitchen tools. A hot water and a detergent can be use to clean this stuff.

Cooking food is a good way to kill the remaining bacteria that when cooking a turkey, the recommended is 40 minutes per kilogram at 190 C. According to the FDA website, “The turkey is safe when the temperature reaches 165 F.” Don’t also rely on the color of the turkey because it’s not a reliable indicator if the turkey is cooked or not. Use a food thermometer to help you know.

After the meal, leftover foods are to be put in the fridge to stop bacteria growth. With an appliance thermometer, check if your refrigerator is at 40 F or your freezer is at 0 F. Don’t defrosts your food at a room temperature. It can be thawed in cold water or in the microwave. And lastly, don’t taste food that looks and smells questionable. If you’re not sure, throw it out. Leftovers are to be consumed within three to four days.

The wine you will add to your recipe will really depend on what you are making. Work it the same as you would when ordering wine with a meal. A hearty red will work beautifully with game, beef and lamp while a white wine or rose will work wonders with a seafood dish or chicken.

I use wine in all my pasta dishes using red wine in my own personal bolognaise recipe and white wine in my chicken and mushroom pasta dish. Of course wine can be used in a range of recipes not only pastas, the wine brings out the flavor of the dish.

I know people who choose to add wine to their recipes instead of a spice, this is because the taste can bring the whole dish together perfectly blending the flavors and offering a taste bud sensation.

Great Recipe Ideas

The first recipe is my ultimate favorite, you don’t use too much wine and the recipe is quick and easy.

My chicken and mushroom pasta recipe is so easy anyone can make it and the white wine gives a wonderful natural taste to the dish. I prefer chicken breast, but that’s my own personal taste because I really don’t like the brown meat of chicken.

You will need some chicken breasts, a punnet of mushrooms, a container of double cream and a glass of your favorite white wine.

Dice your chicken and place in a pan with some olive oil, then dice your mushrooms and add those, allow the chicken to start to brown and your mushrooms to start softening before adding your glass of wine.

Leave your dish to simmer, allowing all the alcohol to evaporate for around fifteen to twenty minutes, then add your cream. Allow to cook until your sauce starts to thicken and serve over your favorite pasta with some parsley on the top for a beautiful finish.

You will find the wine taste really shines through, apart from a little salt and pepper you don’t need to spice the sauce much, the wine does all the hard work for you. This is a wonderful light dish and is so quick to make that you can make it for the family or when you have guests over.

As I mentioned before I also use wine when I make my bolognaise sauce, for this I use a red wine that compliments the meat that I am using. A glass of your favorite red wine will enhance the dish and if you make your bolognaise like I do, it will be simmering for hours, so you don’t have to worry that any alcohol has been left behind.

Some people prefer reducing the amount of wine they add to the dish, but a half a glass of your favorite red wine can do wanders to a beef stew where your favorite white can really enhance seafood paella.

Using the right tools when cooking can improve your efficiency 100%. It stops you wasting time on activities that shouldn’t actually take lots of time. Something as simple as investing in a blender and electric whizzer – can mean you save up to 10 minutes, which you would have wasted stirring and kneading.
